Summertime means smoothie time! Our friends at Goofy Foot Foods shared with us this AMAZING recipe for a smoothie that is sure to cool you off and start your day off right, or afternoon for that matter. Vegan, gluten-free, and dairy-free, this treat will satisfy your taste buds and your stomach!
Not only is this smoothie super YUM, it’s packed with nutrients to help you through your day. The top layer is made up of kiwifruit and maca powder, two ingredients that are known to help fight fatigue and give you a natural burst of energy! Maca is also packed with magnesium, potassium, and vitamin C, doesn’t get much better than that. The antioxidant rich bottom layer helps fight off inflammation and lowers blood glucose levels.
Beating the heat and nourishing yourself at the same time? I don’t see any reason not to break out the blender and enjoy this beautiful summer treat!
Ingredients
Bottom (Purple) Layer
- 3/4 cup almond milk (or any non-dairy milk of choice)
- 2 teaspoons maqui powder
- 1 cup frozen blackberries
- 2 frozen bananas
Top (Green) layer
- 3/4 cup almond milk
- 1-1/2 teaspoons maca powder
- 1 teaspoon Lucuma powder
- 1 frozen banana
- 1 cup frozen pineapple
- 1 kiwifruit (skin removed)
- Topping: We’ve topped our smoothie off with raw pumpkin seeds and Golden Berries
Directions
- Combine bottom (purple) layer ingredients in high-speed blender until well combined. Pour into two smoothie glasses – about half-way up.
- Combine top (green) layer ingredients in high-speed blender until well combined. Top off glasses and garnish.
