What better way to put a delicious spin on a pesto dish than to add nutrient rich pistachios and walnuts bursting with antioxidants, vitamins A and E, lutein and beta-carotene! This easy, 1-step recipe is too good to pass up, so lay it down on some whole wheat pasta or fresh veggies and call it a day.

Ingredients
- 1/2 cup soaked walnuts
- 1/4 cup raw pistachios
- 4-5 cups loosely packed basil
- 1 clove minced garlic
- 1/3 cup extra virgin olive oil
- Juice of 1/2 lemon
- pinch of sea salt (or to taste)
Directions
- Place all ingredients in a high-speed blender or food processor.
- Scrape down sides as you go.
- Enjoy!
A recent study by the Journal of Nutrition and Cancer as reported by Kristin Kirkpatrick, MS, RD, LD, found that the risk of breast cancer in mice dropped significantly when adding just small amounts of walnuts (the equivalence of two ounces a day for humans) to their diet. Further, the study found that the addition of walnuts to the diet changed the activity of multiple genes that are relevant to breast cancer in both mice and humans.
