We’re a big fan of superfoods here at B4BC, and sweet potatoes not only fit the bill quite nicely, but they can be substituted in just about every recipe that calls for regular potatoes. Give this salty-sweet recipe a try; you can’t go wrong with all the vitamins, minerals and fiber packed into these yummy little antioxidant-rich treats!
Ingredients
- 3 sweet potatoes
- Kosher salt
- Freshly ground pepper
- 2 tsp finely grated lime zest
- Pinch of cayenne pepper
- 1/4 cup canola oil {I used extra virgin olive oil}
- 1/4 cup chopped cilantro
Instructions
- Place the potatoes in a large pot of boiling water and cook until fork tender. Let cool, then slice each potato into eighths lengthwise.
- Preheat grill to medium heat. Mix 1 tablespoon salt, lime zest, and cayenne pepper in a bowl.
- Brush the potatoes with oil and season with salt and pepper.
- Place on the grill and grill on all sides until golden brown and cooked through (about 3-4 minutes each side including the skin. You may need to cook shorter or longer on each side depending on your grill, but just make sure the potatoes are fully cooked through).
- Transfer to a plate or platter and sprinkle with lime-salt mixture and chopped cilantro.
