Nothing beats the heat or fills you up better than a delicious, refreshing salad in the summer! This recipe introduces us to a dish with plenty of crunch and just the right amount of sweetness to excite your tastebuds. Not only that, this salad is packed with cruciferous veggies, which have some pretty amazing cancer preventing powers!
Cruciferous veggies are an amazing source of fiber and are rich in many types of nutrients that do our body good: carotenoids, folate, minerals and vitamins C, E, and K. However, what might be the best part of these veggies is that they contain a substance known as glucosinolates, a sulfur-containing chemical that is responsible for the aroma and bitter taste. During prep, chewing, and digestion, the glucosinolates are broken down to form biologically active compounds such as indoles, nitriles, thiocyanates, and isothiocyanates which are known for their anticancer effects. A study was even conducted that showed that women who ate a higher amount of cruciferous veggies had a lower rick of breast cancer.
Which veggies are considered cruciferous you ask? The National Cancer Institute lists the following: arugula, bok choy, broccoli, brussel sprouts, cabbage, cauliflower, collard greens, horseradish, kale, radishes, rutabaga, turnips, watercress, and wasabi.
Being said, there are so many reasons to say YES to this yummy salad! Lunch, dinner, or even a mid-afternoon snack—this salad is sure to satisfy!
Ingredients:
- 1/2 head red cabbage, shredded
- 1/2 head green cabbage, shredded
- 1-2 carrots, shredded
- 1 fennel bulb, thinly sliced
- 1 granny smith apple, julienned
- 1/4 cup goldenberries
- 1/2 granny smith apple, peeled (Option: 1/4 cup apple juice instead of apple)
- 2 tablespoons coconut vinegar
- 1 tablespoon coconut nectar
- 3 tablespoons Flora Health – 7 Sources oil
Directions:
- Prep all salad ingredients and place in a large bowl.
- Place all dressing ingredients in a blender or food processor and blend until smooth and creamy.
- Pour dressing over salad, toss lightly and serve.
