VALENTINE’S DAY RED WINE STRAWBERRIES AND CREAM
These spiced, red-wine-infused strawberries are a perfect Valentine’s sweet for when those candy hearts are saying all the wrong things and flowers just aren’t cutting it.
Get your fix with flavanoid-rich red wine and antioxidant-packed strawberries this year, and you can even let a date have some if you’re willing to share.
Ingredients:
- 1 1/2 cup dry red wine, such as Tempranillo or Monastrell
- 3 tablespoons sugar, divided
- 4 whole star anise
- 3 wide strips orange peel (removed with a vegetable peeler)
- 1/2 pound strawberries, hulled and kept whole
- 1/4 cup Vermont Creamery Fromage Blanc
Method:
In a medium pot, bring wine, 2 tablespoons sugar, star anise and orange peel to a boil. Reduce heat to medium-high and boil until well reduced and syrupy, about 15 minutes; discard star anise and orange peel. Transfer hot syrup to a large bowl with strawberries and toss to coat. Serve immediately, or cover and chill for 8 hours or overnight. To serve, stir remaining 1 tablespoon sugar into fromage blanc and spoon over berries.
