It’s the last Tuesday of the month, which means that B4BC team rider Elena Hight is contributing one of her favorite recipes for Tasty Tuesday! Pineapples have many cancer fighting properties, such as bromelain which helps protect again breast and lung cancer, and well as containing vitamin C and other anti-inflammatory elements. So lather it on to your favorite healthy dish and enjoy!

Saucy Tuesday! Personally I think that pretty much everything tastes better all sauced up…a good sauce can make any ordinary dish extraordinary, which is why I believe food is better dripping in it! This sauce is a pineapple sauce I have been making for a long time. It is sweet and spicy and tangy all at the same time. The best part is it is good with almost everything. Use it as a marinade or on top of grilled chicken or tofu, on a lighter fish like halibut or cod, as a delicious stir-fry sauce, or even as a spread on your favorite sandwich.
1 cup crushed pineapple + juice
1/2 teaspoon red pepper flakes
1/2 teaspoon minced ginger (fresh)
1/8 teaspoon black pepper
1 teaspoon cumin
2 tablespoons brown sugar
2 tablespoons vinegar
2 teaspoons soy sauce or Tamari for a gluten free option
1/4 cup water
1 teaspoon flour (for thickener)
Preparation
- Mix together all ingredients except for water and thickener, and bring to a boil over medium heat.
- Remove half the sauce and puree using a hand blender or regular blender.
- Return to pot and add water and thickener mixture, stirring constantly until the mixture thickens.
- Add to any type of protein dish or stir-fry. Experiment and enjoy!!
