This is a darn good way to receive some darn good health. Be sure to know where your beef soup bones are coming from—organic, healthy bones, will give you the same benefits. I am not a beef eater. I have always had a hard time stomaching beef, because it’s too much for my digestive system. However, I found this soup is not only easily digested, but it’s like a pick-me-up when I was down and out during chemo treatments. I continue to make it to not only bring up my red blood cell count and rebuild my blood with health, but for the overall immunity and wellness of my entire family.
For the stock you will need:
- A crock pot
- 1 tablespoon of apple cider vinegar
- 4-6 large fist sized organic beef bones
- 2-3 inch finger sized chunk of ginger
Add the bones to the crock pot, and fill with water.
Add a tablespoon of apple cider vinegar, sliced and peeled ginger and cook on high at least 12 hours, even better of you can for 24 hours.
Once the stock is ready, strain it all through a metal colander. If there is a dog in the house he will be stoked. Transfer your stock to a large soup pot on the stove.
Sauté on low heat :
- 2 tablespoons sesame or coconut oil
- 2 tablespoons grated ginger
- 4-6 chopped garlic cloves
- 1 large chopped yellow onion
- 6-8 peeled and sliced carrots
- A couple handfuls of shitake mushrooms washed and chopped
Add in ¼ cup of fish sauce, and lightly steam/saute all veggies. When not too soft, add to soup stock.
Boil water, and add in brown/white rice noodles.
Strain, and add to soup, along with another 1/8 – 1/4 cup of fish sauce, depending on your taste.
Add sea salt to taste, and top with scallions and bean sprouts. Mine is purple in the photo because of purple carrots!
