Happy Tuesday! This week we’re bringing you a recipe full of fresh fruit and flavor with a cancer-fighting punch! This super quick meal makes a perfect breakfast, lunch, or dinner for that matter. You may not know it, but papayas and blueberries both have some serious health benefits and you can’t go wrong with Greek yogurt. This delish dish is one of our new go-tos!
Papaya is highly underrated and is definitely becoming one of our favorite fruits. Papayas are an excellent source of vitamin C and vitamin A and include carotenoids such as lycopene and beta-carotene. Carotenoids act as antioxidants with strong cancer-fighting properties that protect cells from free radicals, substances that work to destroy cell membranes and DNA. In addition, papaya promotes digestive health and intestinal cleansing, fights inflammation, and supports the immune system. It protects lung and joint health, revitalizes the body, and boosts energy levels. All these health benefits and it tastes amazing… count us in!
Another key ingredient in this treat is blueberries… and the more the merrier. These little guys tend to fly under the radar when it comes to their health benefits but don’t let that be the case for much longer. According to the American Institute for Cancer Research, blueberries are among the fruits highest in antioxidant power, largely due to their many phytochemicals. Not only that, blueberries give us a whopping serving of vitamin C which our bodies will most definitely thank us for!
Combine these two amazing fruits with potassium-rich bananas, protein rich Greek yogurt, add some crunch with a bit of granola, and top it all off with a drizzle of raw honey and a dash of chia seeds. Our mouths are watering already! We cannot wait to make this for breakfast in the AM, you know you want to too!
Ingredients:
- 1 medium papaya, ripe
- Plain Greek yogurt
- 1/2 cup blueberries
- 1 banana
- 1/2 cup granola
- raw honey
- chia seeds (optional)
Directions:
- Slice papaya in half lengthwise.
- Spoon out seeds and scrape away just enough meat to create a small well.
- Fill each side with yogurt, fruit and granola.
- Drizzle with honey and sprinkle with a pinch of chia seeds if desired.
