Kind of like my sisters, besides being pretty- kale is loaded with good stuff! Its my favourite go-to for snacks, meals, vitamins and greens. In winter, stews, soups and even steamed greens salads can be great warm and hearty meals for cold weather energy and comfort.
Vitamin A found in many root vegetables has been correlated with better brain function, cognitive health and cancer protection. Inflammation and oxidative stress are two primary causes of cancer formation, but vitamin A, vitamin C and other antioxidants can act like natural cancer treatments and help lower the body’s inflammatory responses. And we all love and need anti-inflammatory foods!
One of my favourite kale meals below:
Lentil-Cannellini-Kale Saute Bowls:
- 1 Cup Lentils cooked in 2.5 cups veggie broth
- 1 Can 15oz Cannellini Beans
- 6 chopped garlic cloves
- 1/2 large red onion, diced
- 3 teaspoons coconut oil or ghee
- sea salt
- 2 large bunches kale (my fav is curley kale) washed and chopped
- 1 large avocado
- (optional) goat cheese
Heat up skillet with the coconut oil or ghee. Saute garlic, onion with sea salt. Once soft, add kale for a couple mins until fully wilted and almost crispy. Throw in lentils and cannellini beans until warm, and put into bowls for serving.
Top with goat cheese and avocados- and YUM it up with someone you love and appreciate.
