Ahhh summer. Everyone running around with towels heading to pools, lakes, and rivers, and kids throwing water balloons and running through sprinklers. Then the late afternoon/evening rolls around and bbq smoke starts lingering, and you’re leaning over the neighbours fence to see what they’re grilling. If your hungry for something different than the same ol’ grilled veggies, and looking for a new twist on pesto, here’s our new favourite grilled broccoli recipe:
Krissy’s Vegan Pesto:
2 handfuls basil
1 bunch of mint
1/4 cup olive oil
1/4 cup water
*make sure the water/olive oil are equal amounts
1/2 cup hemp hearts
juice of 1 lemon
Salt and pepper to taste
3-4 large broccoli heads
Drizzle your fresh vegan pesto over the broccoli, and grill on medium heat, occasionally turning, until its bright green and feeling slightly tender.
You can also cut a lemon in half to grill along side
